In Spanish, crudo means raw – we extend the meaning to reflect our style and love of expertly prepared raw fish, artfully and minimally dressed with salt, spice and citrus. As for nudo, well, it’s a homemade word with a wink, inspired by our divine homemade noodles and pastas. Only the finest ingredients make the cut, and delicious things happen when crudo meets nudo.
